Hawaiian water termperatures range from 75 to 80 F on the surface. I don't know if there are any thermoclines, where the water temperature may drop suddenly at depth.
Exposure protection is highly variable depending upon the cold tolerance of the individual. Without knowing anything about you I would recommend at least a 3mm full wetsuit. A shorty may be fine for individuals that have a higher cold tolerance, but a full suit will provide more warmth. Also, the neoprene covering your arms and legs will help protect you from scrapes or stings.
If you tend to chill easily, I would recommend moving up to a 4/3, 5/4 or full 5mm suit. A farmer john/jacket combination will provide the most warmth, essentially doubling the neoprene thickness over the torso. Just be aware that the more neoprene you wear the more positive buoyancy you will have and so the more weight you will need to wear to offset it.
A hood is also a good way to conserve heat. I never dive without one anymore, even in the tropics, though most people don't in warm water.
Brands? There are many, I would recommend that you go with whatever brand your dive shop sells. Major brands include Aqualung, ScuBaPro, Mares, Bare, Henderson, O'Neill, Body Glove, and Xcel. All manufacture quality wetsuits.
